  1. Quick question; nutritionally how does Creme Fraiche rate? Good, bad, indifferent, it depends?

    Just thinking as I’ve used it in a few recipes as of late. Lovely taste off the stuff in sauces but as with everything that tastes good I get suspicious.

  2. Hey Bobby,

    I use creme fraiche a bit myself in cooking (brown off some spring onion in some butter add a few spoons of creme fraiche and some prawns and you’ve got a wonderful sauce for fish), I use sour cream and double cream a fair bit as well. As for carb content, you’re talking about 1.4g per 2oz of sour cream, which is not much at all to be honest so carb content isn’t a worry, suppose it all comes back to lactose intolerance as well as the studies pointing to dairy being cancer causing. Cordain is pretty strictly against it but Mark over at MDA seems a bit more tolerant of it as long as it’s from good grass fed sources, the fact that we’re very lucky in Ireland and are surrounded by grass fed beef means we’re already a step ahead. Not sure where Robb Wolf stands on it but he’s always someones advice I take very seriously, might be worth checking out his blog. Mark’s got a good Dairy overview on his site that’s worth a read, he links to some of the Cordain stuff that delves into the science of things a bit deeper if that’s your cup of tea:

    From my personal perspective I have to say that if every other part of your diet is absolutely perfect and you’re still having some issues with weight loss and/or energy levels sure maybe cut back on the dairy, but it’s rare that someone’s diet is absolutely perfect! :)

    Just as a final point in respect to dairy I just find without dairy food can become a bit ho-hum, with the addition of some high quality cheese, some cream, or some creme fraiche it’s very easy to create a much tastier dish, healthy eating is about a sustainable diet, something you can continue for the rest of your life, not a quick fix solution, so for myself I’ve weighed up the options and decided the benefits outweigh the negatives, up to each person individually.

  3. I love creme fraiche too. I use it a lot. I think the main thing to be aware of is that it’s typically 40% fat. I think that when I worked it out for the zone I put it at 1 block for a level teaspoon. If you’re not too concerned about how much fat you’re consuming, and I typically amn’t, then I reckon it’s a good choice. I prefer it over sour cream beacause it doesn’t have any “nasties” in it. The ingredients are just cream and buttermilk. Generally sour cream has thickeners and other rubbish in there. Creme fraiche doesn’t split when heated thanks to the high fat content. Which means it’s perfect for throwing into a pan you’ve just cooked a steak in with a bit of wholegrain mustard and a little decent stock or a splash of wine to make a really quick sauce. Yum. You can also mix a couple of spoonfuls of creme fraiche with a couple of spoonfuls of ricotta cheese and some chopped tarragon, dried apricots and scallions, season and stuff the mixture into a chicken breast, wrap in parma ham and bake for 25 mins.

  5. I figured as much with regards to grass fed cows. I wouldn’t be a huge dairy consumer (butter and small bit of milk in my scrambled eggs) but I was just curious.

    Nice recipes there guys. Stuffing any form of meat and then wrapping it in another meat is always a recipe for success if only in 70′s big terms. Cheers.
